Prepare the Steak (2 minutes): Place the steak between two sheets of plastic wrap. Pound with a meat mallet until it's about ¼-inch thick. Season one side generously with salt and pepper, then sprinkle with half of the bread crumbs. Flip, and repeat seasoning and bread crumbs on the other side.

Sear the Steak (2 minutes): Heat 2 tablespoons of clarified butter in a cast-iron skillet over high heat until smoking hot. Carefully lay the steak in the skillet and sear for 1 minute. Flip, reduce heat to medium-high, and cook for another minute, or until a little pink juice appears on the surface. Transfer to a warm plate.

Fry the Egg (3 minutes): Let the pan cool slightly (30 seconds). Add 1 teaspoon of clarified butter, then crack in the egg. Gently poke the egg white to even the thickness and keep the yolk centered. Season with a pinch of salt. Cook until the white is set and the edges are crispy and brown. Carefully place the egg on top of the steak.

Make the Red Hot Butter Sauce (1 minute): In the same warm pan, add the room-temperature butter and hot sauce. Swirl until the butter is melted and emulsified. If the sauce is too thick, stir in water, 1 teaspoon at a time, until desired consistency is achieved.

Serve (1 minute): Spoon the red hot butter sauce generously over the steak and egg. Garnish with sliced green onions or chives. Serve immediately.

For best results, use a cast-iron skillet to achieve a perfect sear on the steak.
Ensure your pan is screaming hot before adding the steak for optimal browning.
Adjust the amount of hot sauce to your personal preference.
If you don't have clarified butter, regular butter can be used, but be careful not to burn it at high heat.
For a richer flavor, consider adding a small pat of butter to the steak as it rests.
