For an even richer flavor, try using ghee (clarified butter) instead of vegetable oil. If you don't have a non-stick pot, you can line the bottom of the pot with a few thinly sliced potatoes to create the tahdig and prevent sticking. Adjust the amount of saffron to your preference. More saffron will result in a more intense color and flavor. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat gently in a saucepan or microwave.
