Preheat your air fryer to 400 degrees F (200 degrees C) according to the manufacturer's instructions. (2 minutes)

In a shallow bowl, lightly beat the egg with salt. On a separate plate, spread the panko bread crumbs in an even layer. (3 minutes)

Dip each chicken cutlet into the egg mixture, ensuring both sides are coated. Allow excess egg to drip off. Then, dredge the cutlet in the panko bread crumbs, pressing gently to ensure the crumbs adhere well. Place the coated cutlets on a piece of parchment paper. (10 minutes)

Spray both sides of each cutlet generously with avocado oil cooking spray. Place the cutlets in the air fryer basket, being careful not to overcrowd. You may need to cook in batches. (2 minutes)

Air-fry for 5 minutes, then flip the cutlets carefully. Continue to air-fry for an additional 4 minutes, or until the chicken is cooked through and the crust is golden brown and crispy. (9 minutes)

Serve immediately with tonkatsu sauce or your favorite barbecue sauce. Garnish with chopped green onions. (1 minute)

For extra crispy katsu, try double-dredging the chicken: dip in egg, then panko, then egg again, and finally panko once more.
If you don't have an air fryer, you can bake these in a preheated oven at 400 degrees F (200 degrees C) for about 15-20 minutes, flipping halfway through.
To add a little zest, try mixing a teaspoon of sesame oil or a pinch of cayenne pepper into the panko bread crumbs.
Chicken cutlets can be purchased pre-cut or created by slicing chicken breasts horizontally and pounding to about 1/4 inch thickness.
