Follow The Directions

01

Step

Preheat oven to 425 degrees F (220 degrees C). Line 10 muffin cups with paper liners. (5 minutes)

02

Step

In a bowl, sift together 3 cups almond flour, baking powder, salt, and baking soda. Set aside. (5 minutes)

03

Step

In a separate bowl, using an electric mixer, beat sugar, melted butter, Greek yogurt, eggs, and vanilla extract until smooth and creamy. Gradually beat in the flour mixture until just combined, being careful not to overmix. (10 minutes)

04

Step

In a small bowl, toss ¾ cup chocolate chips with 1 tablespoon almond flour to lightly coat. Gently fold into the batter. Spoon batter into the prepared muffin cups, filling each to the top. Sprinkle the remaining ¼ cup chocolate chips over the muffin tops. (10 minutes)

05

Step

Bake in the preheated oven for 5 minutes, then reduce the heat to 350 degrees F (175 degrees C). Continue baking until the tops are golden brown and a toothpick inserted into the center comes out clean, approximately 12 to 15 minutes. (20 minutes)

06

Step

Cool the muffins in the tin on a wire rack for at least 5 minutes before serving to prevent them from falling apart. (5 minutes)

For a richer flavor, use brown butter instead of melted butter.
Feel free to substitute dark chocolate chips for semisweet.
These muffins are best enjoyed fresh but can be stored in an airtight container for up to 3 days.
