In a large gallon-sized pitcher, combine the rice milk, almond milk, and sweetened condensed milk. Stir well to ensure everything is evenly incorporated. (5 minutes)

In a separate bowl, pour about 2 cups of the milk mixture from the pitcher. Gradually whisk in the ground cinnamon until it is mostly dissolved, creating a smooth, spiced slurry. (5 minutes)

Pour the cinnamon mixture back into the pitcher, stirring gently to combine it with the rest of the milk base. Add the cinnamon sticks. (3 minutes)

Cover the pitcher and refrigerate for at least 4 hours, or preferably overnight, to allow the flavors to meld and deepen. (240 minutes)

Before serving, remove the cinnamon sticks. Stir the horchata well. Serve over ice, and garnish with a sprinkle of ground cinnamon for an extra touch of flavor and visual appeal. (2 minutes)

For a richer flavor, use full-fat sweetened condensed milk.
Adjust the amount of cinnamon to your preference. Start with the recommended amount and add more to taste.
If you prefer a less sweet horchata, reduce the amount of sweetened condensed milk.
For an extra layer of flavor, consider adding a pinch of nutmeg or cardamom along with the cinnamon.
This horchata can be stored in the refrigerator for up to 3 days. Stir well before serving as some settling may occur.
To make this dairy-free, use sweetened condensed coconut milk.
