Follow The Directions

01

Step

Preheat oven to 350°F (175°C). Line a 12-cup muffin tin with paper liners. (5 minutes)

02

Step

In the bowl of a stand mixer fitted with the paddle attachment, combine brown sugar, melted butter, and granulated sugar. Beat on medium speed until light and fluffy. (3 minutes)

03

Step

Add eggs one at a time, mixing well after each addition. (2 minutes)

04

Step

In a separate bowl, whisk together flour, cinnamon, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just combined. (3 minutes)

05

Step

Add apple cider and vanilla extract. Beat on medium-high speed for 2 minutes, until the batter is smooth and well combined.

06

Step

Evenly divide the batter into the prepared muffin cups, filling each about 2/3 full. (5 minutes)

07

Step

Bake in the preheated oven for 18-22 minutes, or until a toothpick inserted into the center comes out clean. (20 minutes)

08

Step

Let the cupcakes cool in the tin for 5 minutes before transferring them to a wire rack to cool completely. (25 minutes)

09

Step

While the cupcakes are cooling, prepare the frosting. In the bowl of a stand mixer fitted with the paddle attachment, beat together cream cheese and softened butter until smooth and creamy. (3 minutes)

10

Step

Gradually add sifted powdered sugar, beating on low speed until combined. (2 minutes)

11

Step

Add vanilla extract and beat on high speed until the frosting is light and fluffy. (2 minutes)

12

Step

Once the cupcakes are completely cool, frost them generously with the cream cheese frosting.

For a richer flavor, consider using apple cider reduction in place of regular apple cider. To make an apple cider reduction, simmer apple cider in a saucepan over medium heat until it has reduced to about 1/4 of its original volume.
Be careful not to overmix the batter, as this can result in tough cupcakes.
Sifting the powdered sugar ensures a smooth and lump-free frosting.
Store frosted cupcakes in an airtight container in the refrigerator.
