Follow The Directions

01

Step
0 mins

Gather all ingredients.

02

Step
6 mins

Bring a large pot of salted water to a boil over high heat. Add pappardelle and cook until al dente, about 6 minutes. Drain pasta over a heatproof bowl, reserving 1 1/2 cups of cooking water; set aside.

03

Step
6 mins

Heat olive oil in a large, deep skillet over medium heat. Add shallot and garlic and cook, stirring constantly, until softened, about 2 minutes. Add asparagus and 1/2 cup of the reserved cooking water. Cook, stirring occasionally, until asparagus is bright green and tender, about 4 minutes.

04

Step
4 mins

Add butter, heavy cream, lemon zest and juice, salt, black pepper, crushed red pepper, and the remaining 1 cup of cooking water to the skillet. Stir in the cooked pasta and cook over medium-low heat, gently stirring with tongs and sprinkling in Parmesan cheese, until the sauce thickens and coats the pasta, about 2 minutes. Divide the pasta evenly among 4 bowls and garnish with fresh basil and additional Parmesan cheese.

For an extra layer of flavor, consider grilling the asparagus before adding it to the pasta.
A splash of dry white wine can be added to the shallots and garlic while cooking for a more complex flavor profile.
Adjust the amount of crushed red pepper to your preferred level of spice.
If the sauce becomes too thick, add a little more of the reserved pasta water to reach your desired consistency.
Freshly grated Parmesan is highly recommended for the best flavor and texture.
