Position an oven rack approximately 6 inches from the broiler and preheat to high.

Lightly coat a 9x13-inch glass baking dish with cooking spray. Arrange the halved tomatoes, cut-side down, in the dish. Add the onion and jalapeno.

Broil until the tomato skins are deeply blackened and blistered, approximately 10 to 15 minutes. After 5-7 minutes, remove the onion and jalapeno once their skins have softened slightly.

Carefully transfer the broiled vegetables to a blender. Add the cilantro, lime juice, and 1 teaspoon of garlic salt. Pulse until the mixture is smooth. Taste and adjust seasoning with the remaining garlic salt as needed.

For a milder salsa, remove the seeds and membranes from the jalapeno before broiling.
If you prefer a chunkier salsa, pulse the blended ingredients briefly instead of blending until completely smooth.
This salsa is best served fresh, but can be stored in an airtight container in the refrigerator for up to 3 days. The flavors will meld and deepen over time.
