Add diced celery and minced garlic to the pot with the bacon drippings. Cook until celery is softened and garlic is fragrant (3-4 minutes). Add finely chopped cauliflower, water, and onion powder. Cover the pot and steam cauliflower, stirring occasionally, until tender (about 5 minutes).

Pour in milk and 1 3/4 cups chicken broth. Add hot sauce to taste. Bring the mixture to a gentle boil, stirring occasionally.

In a small bowl, whisk flour into the remaining 1/4 cup chicken broth until smooth, creating a slurry. Slowly drizzle the flour mixture into the boiling chowder, stirring constantly to prevent lumps. Add shredded Cheddar cheese and half of the crumbled bacon. Stir until cheese is fully melted and the chowder is smooth and creamy.

Season chowder with salt, freshly ground black pepper, and additional hot sauce to taste. Ladle into bowls and garnish each serving with the remaining crumbled bacon.

For an even smoother texture, use an immersion blender to partially puree the chowder before adding the cheese.
If you prefer a thicker chowder, add an additional tablespoon of flour to the slurry.
Feel free to experiment with different types of cheese, such as Gruyere or Pepper Jack, for a unique flavor profile.
Garnish with a dollop of sour cream or a sprinkle of fresh chives for added richness and flavor.
