To easily warm the corn tortillas, wrap them in a damp paper towel and microwave for 30 seconds, or heat them in a dry skillet over medium heat for a few seconds per side.
To make this dish vegetarian, substitute the chicken with 1 (14-ounce) can of drained and rinsed black beans or pinto beans. Add the beans to the vegetable mixture before baking.
