Follow The Directions
01
Step
Preheat your oven to 450 degrees F (230 degrees C). Prepare four sheets of aluminum foil by lightly spraying each with cooking spray. (5 minutes)
02
Step
Place one chicken breast in the center of each foil sheet. Generously top each breast with 1/4 cup of barbecue sauce, creating a luscious base. Layer the frozen corn and chopped green bell pepper evenly over the barbecue sauce. (10 minutes)
03
Step
Carefully fold the sides of each aluminum foil sheet over the chicken breast mixture. Double-fold the top and ends to create a secure seal, forming individual 'pouches.' Ensure there is enough space inside each pouch for air to circulate. Arrange the pouches on a baking sheet. (10 minutes)
04
Step
Bake in the preheated oven until the chicken is cooked through and the juices run clear. This should take approximately 18 to 29 minutes. An instant-read thermometer inserted into the center of the chicken should register at least 165 degrees F (74 degrees C). Exercise caution when opening the pouches, as steam will escape. Puncture one end of the pouch to vent the steam before fully opening. (25 minutes)
For an extra layer of flavor, marinate the chicken breasts in barbecue sauce for at least 30 minutes before assembling the pouches.
Feel free to customize the vegetables in your pouches. Diced onions, bell peppers of different colors, or even a sprinkle of chili flakes can add a unique twist.
Alternatively, you can grill these pouches! Place them on a preheated grill over medium heat, close the lid, and cook for 12 to 15 minutes, or until the chicken is fully cooked.
Ensure the foil pouches are tightly sealed to prevent any juices from leaking during baking.
