For an even richer flavor, add a tablespoon of tomato paste to the pot during the simmering process. Feel free to experiment with other aromatics, such as carrots, thyme, or parsley stems. If you don't have time to roast the bones, you can skip this step, but roasting adds depth of flavor. Use filtered water for the best flavor.
