For a richer flavor, use Italian sausage instead of ground beef.
Fresh spinach can be used instead of frozen. Saute fresh spinach until wilted before adding to the cottage cheese mixture.

To prevent the noodles from sticking, toss them with a little olive oil after draining.
Make sure the spinach is well-drained to avoid a watery casserole.
