Build the Broth: Return the ribs to the pot. Pour in 1 quart of fresh water, and then add the chopped onions, crushed black peppercorns, and beef bouillon cubes. Bring the mixture to a boil, then reduce the heat to low, cover the pot, and simmer gently for 1 hour, allowing the flavors to meld. (1 hour)

Add Vegetables: Skim off any fat that has risen to the surface of the broth. Stir in the quartered potatoes, chayote squash, carrots, and celery. Cover the pot again and simmer until the potatoes are tender, about 20 minutes. (20 minutes)

Final Touches: Season the stew with salt to taste. Add the cabbage wedges and cook for an additional 5 minutes, until they are slightly tender but still retain some crispness. (5 minutes)

For a richer flavor, brown the beef short ribs in a pan before adding them to the pot.
Adjust the amount of salt according to your preference.
Serve hot with a side of steamed rice for a complete and satisfying meal.
