Follow The Directions

01

Step

Prepare your workstation: Line a baking sheet with parchment paper (or aluminum foil) and lightly grease with cooking oil spray. (2 minutes)

02

Step

Combine the base: In a large bowl, gently toss the chow mein noodles. (1 minute)

03

Step

Melt the binder: In a medium saucepan, combine the miniature marshmallows and butter over medium heat. Stir constantly until completely melted and smooth. (5 minutes)

04

Step

Coat the noodles: Pour the melted marshmallow mixture over the noodles, and stir gently but thoroughly until all the noodles are evenly coated. (3 minutes)

05

Step

Form the nests: Lightly grease your hands with a touch of butter to prevent sticking. Scoop about 1/6 of the noodle mixture and gently form into a ball. Place on the prepared baking sheet. Repeat until you have 6 nests. (8 minutes)

06

Step

Create the indentation: Using the back of a teaspoon, gently press down in the center of each ball to create a hollow 'nest' indentation. (2 minutes)

07

Step

Set the nests: Allow the nests to set at room temperature until firm. This will take approximately 20-30 minutes, or you can speed up the process by refrigerating for 10-15 minutes.

08

Step

Fill the nests: Once the nests are firm, fill each indentation with small jelly beans or your candy of choice. (3 minutes)

For a richer flavor, use brown butter instead of regular butter. Simply melt the butter in the saucepan and continue cooking until it turns a nutty brown color. Be careful not to burn it!
Get creative with your candy fillings! Mini M&Ms, chocolate-covered raisins, or even small pieces of chopped nuts would all be delicious.
To prevent the nests from sticking, make sure to grease your hands well with butter before forming the balls.
If you are making these with young children, consider melting the marshmallow mixture ahead of time to avoid any potential burns.

I found that chilling the nests in the refrigerator helped them set faster.
