Follow The Directions

01

Step
5 mins

Gently scoop the flesh from the figs with a spoon, discarding the skins. This step ensures a smooth and luxurious final texture. (5 minutes)

02

Step
5 mins

In a heavy-bottomed saucepan, combine the sugar and water. Bring to a boil over medium-high heat, stirring constantly until the sugar is completely dissolved and the mixture is clear. (5 minutes)

03

Step
25 mins

Stir in the reserved fig pulp, lime juice, cinnamon, ginger, and white pepper. Reduce heat to medium and cook, stirring frequently to prevent sticking, until a candy thermometer registers 210°F (100°C). This will take approximately 20-25 minutes. The preserves should be thickened and glossy.

04

Step
5 mins

While the preserves are cooking, ensure your jar and lid are sterilized. Submerge them in boiling water for at least 5 minutes. Carefully remove with tongs and set on a clean towel to dry.

05

Step
2 mins

Once the preserves reach the desired consistency, immediately transfer the hot preserves into the sterilized jar, leaving approximately 1/4 inch of headspace. Wipe the rim of the jar clean with a damp cloth.

06

Step
1 mins

Carefully place the sterilized lid on the jar and screw on the band until snug but not too tight.

07

Step
1 hrs

Allow the jar to cool completely at room temperature. As it cools, you should hear a 'pop' sound, indicating a proper seal. Once cooled, store the preserves in the refrigerator.

For a deeper flavor, consider adding a splash of balsamic vinegar towards the end of the cooking process.
Sterilizing your jars properly is crucial for preventing spoilage. Make sure the jars and lids are completely submerged in boiling water.
If you don't have a candy thermometer, you can test the consistency by placing a small spoonful of the preserves on a chilled plate. If it sets up quickly and doesn't run, it's ready.
