Follow The Directions

01

Step

Crisp the Bacon (10 minutes): In a large skillet, cook the bacon over medium heat until crisp and golden brown. Drain on paper towels to remove excess grease. Once cooled, crumble into bite-sized pieces, reserving a small amount for garnish, if desired.

02

Step

Cook the Macaroni (8-10 minutes): Bring a large pot of salted water to a rolling boil. Add the elbow macaroni and cook according to package directions until al dente. Drain immediately and rinse under cold water to stop the cooking process. Allow the macaroni to cool completely (10-15 minutes).

03

Step

Combine and Chill (5 minutes): In a large bowl, whisk together the mayonnaise and coleslaw dressing until smooth. Add the cooled macaroni, crumbled bacon, chopped lettuce, diced tomatoes, and sliced green onions. Gently toss to combine, ensuring all ingredients are evenly coated in the dressing. Season with freshly ground black pepper to taste.

04

Step

Chill for at least 30 minutes before serving to allow the flavors to meld. Garnish with extra bacon crumbles and a sprinkle of fresh green onions before serving, if desired.

For a vegetarian option, consider using smoked tempeh or mushroom 'bacon' instead of traditional bacon.
To prevent the lettuce from wilting, add it just before serving.
Adjust the amount of mayonnaise and coleslaw dressing to your liking. Some prefer a tangier salad, while others enjoy a creamier texture.
For an extra layer of flavor, add a tablespoon of apple cider vinegar or lemon juice to the dressing.
This salad can be made a day ahead. Store in an airtight container in the refrigerator.

The key is to not overcook the macaroni. Al dente is definitely the way to go!
