For a spicier dish, use more hot sausage or add a pinch of red pepper flakes to the filling. To make ahead, prepare the peppers and filling, stuff the peppers, and refrigerate. Bake just before serving, adding about 15 minutes to the baking time. If you don't have fresh garlic, 1 teaspoon of garlic powder can be substituted.
