Follow The Directions

01

Step

In a slow cooker, combine the tomato sauce, coconut milk, chicken broth, curry powder, salt, and cayenne pepper (if using).

02

Step

Add the cubed chicken, chickpeas, potatoes, carrots, and sliced onion to the slow cooker. Mix well to ensure all ingredients are coated with the liquid.

03

Step

Cover and cook on High for approximately 4 hours, or on Low for about 8 hours, or until the chicken is cooked through and tender.

04

Step

Stir in the frozen peas and lemon juice. Season with salt and pepper to taste.

05

Step

Cook for an additional 5 minutes to heat the peas through.

06

Step

Divide the chicken and vegetable mixture among plates and garnish generously with freshly chopped cilantro before serving.

For a spicier dish, increase the amount of cayenne pepper or add a chopped chili pepper to the slow cooker.
Serve this dish over rice, quinoa, or couscous for a complete meal.
Feel free to add other vegetables such as bell peppers, zucchini, or spinach to the slow cooker.
For a richer flavor, use full-fat coconut milk.

I found that the chicken was a little dry when cooked on High, so I recommend cooking it on Low for best results.
