Pour in white wine and bring to a boil, about 3 minutes. Add 2 cups chicken stock, cooked chicken, and peas, then return to a boil.

In a pint jar, combine flour with the remaining 1 cup chicken stock, shaking until smooth. Gradually pour the flour-stock mixture into the boiling skillet, stirring constantly to prevent lumps. Return to a boil and cook, stirring occasionally, until thickened, about 5 minutes.

Remove from heat and stir in 1 cup Parmesan cheese until melted. Pour the sauce over the cooked pasta, add parsley and crumbled bacon. Stir to combine.

For a richer flavor, use pancetta instead of bacon.
If you don't have white wine, you can substitute with additional chicken stock and a tablespoon of lemon juice.
