For a richer flavor, use pancetta instead of bacon. If fresh gnocchi isn't available, dried gnocchi can be used. Cook according to package directions before pan-frying. Adjust the amount of red pepper flakes to your preference for heat. A splash of white wine can be added to the tomato-balsamic sauce for extra depth of flavor. Add it along with the tomatoes. Serve with a sprinkle of grated Parmesan cheese, if desired.
