Preheat your oven to 400°F (200°C). (5 minutes)

In a food processor, combine the flour, sugar, baking powder, and salt. Pulse until combined. Add the chilled butter and pulse until the mixture resembles coarse breadcrumbs. (5 minutes)

Transfer the mixture to a large bowl. Stir in the chocolate chips and dried cranberries. (2 minutes)

In a separate small bowl, whisk together the almond milk and vanilla extract. (1 minute)

Gradually add the almond milk mixture to the dry ingredients, mixing gently with your hands or a spoon until a dough begins to form. If the dough is too dry, add more almond milk, 1 tablespoon at a time, until it comes together. Be careful not to overmix. (5 minutes)

Turn the dough out onto a lightly floured surface. Gently pat the dough into a 3/4-inch thick circle. Use a knife or cookie cutter to cut the circle into 11 wedges. Place the scones onto a baking sheet lined with parchment paper. (5 minutes)

Bake in the preheated oven for 12-14 minutes, or until golden brown. Let cool slightly on the baking sheet before serving. (14 minutes)

For best results, use very cold butter. You can even freeze the butter for 15 minutes before using.
If you don't have almond milk, you can use regular milk or any other non-dairy milk.
Feel free to experiment with different types of chocolate chips or dried fruit.
For a richer flavor, brush the tops of the scones with melted butter or cream before baking.
These scones are best enjoyed fresh, but they can be stored in an airtight container for up to 2 days.
