For an extra boost of coffee flavor, add 1 teaspoon of instant espresso powder to the dry ingredients. Store leftover muffins in an airtight container at room temperature for up to 3 days, or in the refrigerator for up to 5 days. These muffins can also be frozen for longer storage. Wrap them individually in plastic wrap and then place them in a freezer-safe bag or container. Thaw at room temperature before serving.
