Follow The Directions

01

Step

Preheat oven to 350°F (175°C). Position a rack in the upper third of the oven. Line baking sheets with parchment paper. (5 minutes)

02

Step

In a stand mixer, cream together the softened butter and light brown sugar on medium-slow speed until light and fluffy, about 3-4 minutes. Beat in the vanilla extract, then add the eggs one at a time, mixing well after each addition. Reduce the mixer speed to low and keep it running. (5 minutes)

03

Step

In a separate bowl, whisk together the rolled oats, flour, baking powder, cinnamon, kosher salt, and nutmeg. Gradually add the dry oat mixture to the mixer, about 1/3 at a time, mixing until just combined. Stir in the dried cranberries and toasted pecans until evenly distributed. Use a large cookie scoop to drop the dough onto the prepared baking sheets, spacing them about 2 inches apart. (10 minutes)

04

Step

Bake one batch at a time in the preheated oven until the edges are golden brown, about 17-18 minutes. Let the cookies cool on the baking sheets for about 5 minutes before transferring them to wire racks to cool completely. (25 minutes)

For best results, ensure your butter is at room temperature before creaming it with the sugar.
To enhance the nutty flavor, toast the pecans in a dry skillet over medium heat for 5-7 minutes before chopping.
Store the cooled cookies in an airtight container at room temperature for up to 5 days.
