Bring a large pot of lightly salted water to a rolling boil. Add the gemelli pasta and cook according to package directions, about 11 minutes, until al dente. Reserve 1/2 cup of pasta water before draining. (Approximately 11 minutes)

While the pasta cooks, heat the olive oil in a large skillet over medium-high heat. Add the sweet Italian sausage and cook, breaking it up with a spoon, until browned and cooked through. (Approximately 5 minutes)

Add the diced tomato, onion, and minced garlic to the skillet with the sausage. Sauté until the onion is softened and fragrant. (Approximately 3 minutes)

Pour in the chicken broth, scraping up any browned bits from the bottom of the pan to deglaze. Add the finely chopped kale and cook, tossing occasionally, until it wilts and becomes tender. Season with salt and pepper to taste. (Approximately 5 minutes)

In a separate medium saucepan, melt the butter over medium heat. Whisk in the flour and cook, stirring constantly, for 1 minute to create a roux. (Approximately 1 minute)

Gradually pour in the milk while whisking vigorously to ensure a smooth sauce, free of lumps. Season with salt and pepper. Continue to cook, stirring occasionally, until the sauce thickens and begins to bubble gently. (Approximately 7-10 minutes)

If the sauce becomes too thick, thin it out with some of the reserved pasta water until it reaches your desired consistency. Remove the sauce from the heat.

Pour the creamy sauce into the skillet with the sausage and kale mixture. Add the drained pasta and toss to coat evenly.

Serve immediately, garnished with grated Parmesan cheese, if desired.

For a spicier kick, use hot Italian sausage.
Adding a pinch of red pepper flakes to the sauce can also enhance the flavor.
If you don't have gemelli pasta, penne or rotini work well as substitutes.
Freshly grated Parmesan cheese is highly recommended for the best flavor.
