Follow The Directions

Step

In the bowl of a stand mixer, combine the hot water, sugar, and yeast. Let stand until foamy, about 10 minutes.

Attach the dough hook and gradually mix in 3 cups of bread flour and the rolled oats until well combined. (5 minutes)

Cover the bowl with a cloth and let the dough rise in a warm place until doubled in size, about 1 hour.

Return the bowl to the mixer. Pour in the melted butter, then gradually add the remaining 6 cups of bread flour and salt. (10 minutes)

Knead with the dough hook on medium speed until the dough is smooth and elastic, about 5-8 minutes.

Preheat oven to 375 degrees F (190 degrees C). Grease 24 muffin cups.

Pinch off approximately 2 tablespoons of dough and form into a small ball. Repeat to make 3 balls. Place the 3 dough balls into one greased muffin cup to resemble a cloverleaf. (20 minutes)

Repeat with the remaining dough until all muffin cups are filled.

Bake in the preheated oven until golden brown, about 38 minutes.

For an extra touch of flavor, brush the tops of the baked rolls with melted butter.
These rolls freeze well. Allow them to cool completely before freezing in an airtight container.
If you don't have a stand mixer, you can knead the dough by hand on a lightly floured surface until smooth and elastic.
Make sure your water isn't too hot or it will kill the yeast. Lukewarm is ideal.
