In a medium bowl, gently combine the drained pineapple chunks, mandarin oranges, banana slices, grapes, and marshmallows. (5 minutes)

For an extra layer of flavor, try adding a splash of orange liqueur or a pinch of ground cardamom.
To toast the coconut, spread it in a single layer on a baking sheet and bake at 350°F (175°C) for 5-7 minutes, or until golden brown, watching carefully to prevent burning.
This Ambrosia can be made ahead of time and stored in the refrigerator for up to 24 hours. However, it's best served soon after the banana is added to prevent browning.
Substitute different fruits based on seasonal availability, such as strawberries, blueberries, or peaches.
