Preheat oven to 425°F (220°C). Place a 10-inch oven-safe skillet (cast iron is ideal) in the oven to heat up (5 minutes).

While the skillet heats, combine eggs, milk, flour, 2 tablespoons granulated sugar, and salt in a blender. Blend until completely smooth, about 30 seconds.

Carefully remove the hot skillet from the oven. Add butter to the skillet and swirl to coat the bottom and sides as it melts quickly (1 minute).

Pour the batter into the hot skillet. The butter should sizzle (1 minute).

Bake in the preheated oven until the Dutch Baby is puffed up, golden brown, and cooked through, about 18-20 minutes.

While the Dutch Baby bakes, prepare the compote. In a medium bowl, gently toss the sliced bananas, strawberries, blueberries, 1 tablespoon granulated sugar, and lemon juice (2 minutes).

Once the Dutch Baby is ready, remove it from the oven. Dust with confectioners' sugar, if desired. Spoon the banana-berry compote over the Dutch Baby. Cut into wedges and serve immediately with whipped cream or vanilla ice cream, if desired.

For an extra touch of flavor, try adding a teaspoon of vanilla extract to the batter.
Don't open the oven door while the Dutch Baby is baking, or it may deflate.
If you don't have a blender, you can whisk the batter by hand, but be sure to whisk very thoroughly to avoid lumps.
Feel free to customize the compote with your favorite fruits. Raspberries, blackberries, or peaches would all be delicious additions.
Using a cast-iron skillet helps to distribute the heat evenly and create a perfectly golden-brown Dutch Baby.
