Follow The Directions

01

Step
5 mins

Gather all of your ingredients and prepare your mise en place. (5 minutes)

02

Step
7 mins

In a small saucepan, bring the water and salt to a rolling boil. Gently add the peeled pearl onions and cook until they are just tender, approximately 5 to 10 minutes. Test for doneness with a paring knife; it should slide in with slight resistance.

03

Step
13 mins

Drain the onions in a colander, reserving 1/2 cup of the cooking water in the saucepan. Return the cooked onions to the saucepan and add the butter. Allow the butter to melt and coat the onions. (2 minutes)

04

Step
2 mins

In a separate bowl, whisk together the cold whole milk and quick-mixing flour until smooth and no lumps remain. (2 minutes)

05

Step

Pour the milk and flour mixture into the saucepan with the onions and butter. Cook over medium-low heat, stirring constantly, until the sauce thickens to your desired consistency, about 10 to 15 minutes. If the sauce is too thin, gradually whisk in a bit more quick-mixing flour, a teaspoon at a time, until the desired thickness is achieved. Continue cooking for another minute to ensure the flour is fully incorporated. (10-15 minutes)

06

Step

Taste and adjust seasoning with salt as needed. Serve immediately and enjoy the warm, comforting flavors of this classic dish.

For the best flavor, use fresh pearl onions. Frozen pearl onions can be used in a pinch, but the flavor and texture will not be quite as good.
Be careful not to overcook the onions, as they will become mushy. They should be tender but still hold their shape.
Constant stirring is key to preventing the sauce from scorching and ensuring it thickens evenly.
A pinch of nutmeg can be added to the sauce for a warm, aromatic note.
If you prefer a richer sauce, you can substitute half-and-half or heavy cream for some of the milk.

Yes, the creamed onions can be made a day ahead and reheated gently on the stovetop or in the oven. You may need to add a splash of milk to loosen the sauce when reheating.

Used almond milk and gluten free flour. Was still amazing!

The sauce was a bit thin for my liking, so I added an extra tablespoon of flour.

My family raved about these! I used shallots because I couldn't find pearl onions, and it still turned out great.
