Follow The Directions

Step

Preheat your oven to 350°F (175°C). Generously spray a 12-cup muffin tin with nonstick cooking spray to prevent sticking. (2 minutes)

Arrange a thin layer of the thinly sliced tri-color baby potatoes in the bottom of each muffin cup. Dot each cup with a small amount of butter. (5 minutes)

Bake the potato-lined muffin tin in the preheated oven for 5 minutes to slightly soften the potatoes. (5 minutes)

In a large bowl, whisk together the eggs, diced yellow bell pepper, diced tomato, chopped spinach, diced ham, and chopped white onion until well combined. (5 minutes)

Carefully ladle the egg mixture evenly over the warm potatoes in each muffin cup, filling them almost to the top. Gently press the mixture to ensure even distribution. Top each muffin cup with a mozzarella cube. (5 minutes)

Return the muffin tin to the oven and continue baking until the eggs are set and the tops are lightly golden, about 20 minutes. A toothpick inserted into the center should come out clean. (20 minutes)

Remove the egg bites from the oven and let them cool in the muffin tin for a few minutes before carefully transferring them to a serving plate. (5 minutes)

For an extra layer of flavor, consider adding a sprinkle of grated Parmesan cheese to the top of each egg bite before baking.
These egg bites are delicious served warm or at room temperature. They can also be stored in the refrigerator for up to 3 days and reheated in the microwave or oven.
