For a spicier chili, add a pinch of cayenne pepper or a diced jalapeño along with the other spices. If you don't have elk meat, ground beef, venison, or even ground turkey can be substituted. Feel free to adjust the amount of chili powder and cumin to suit your taste. This chili is even better the next day, as the flavors have had time to meld together.
