Sauté Aromatics and Pork: Heat the olive oil in a large skillet or pot over medium heat. Add the diced onion and minced garlic and cook until softened and fragrant, about 5 minutes. Add the bite-size pork pieces and cook, stirring occasionally, for another 5 minutes, seasoning with salt and pepper. (Total time: ~10 minutes)

Simmer the Stew: Add the diced tomatoes and the reserved cup of broth to the skillet. Cover and simmer for 10 minutes. (Total time: ~10 minutes)

Combine and Finish: Stir in the cooked pork liver, garbanzo beans, raisins, and diced potatoes. Cover and simmer until the potatoes are fork-tender, about 10-15 minutes. Adjust seasoning as needed. (Total time: ~15 minutes)

For a richer flavor, brown the pork chops in the skillet before adding the onions and garlic.
Feel free to add other vegetables like carrots or bell peppers to the stew.
If you prefer a thicker sauce, you can add a tablespoon of tomato paste during the simmering process.
Serve hot with steamed rice for a complete and satisfying meal.
