Follow The Directions

01

Step
5 mins

Preheat oven to 350 degrees F (175 degrees C). (5 minutes)

02

Step
5 mins

In a mixing bowl, blend the sugar and heavy whipping cream until well combined. Gradually stir in the flour, followed by the finely chopped almonds and candied orange peel until evenly distributed. (5 minutes)

03

Step
10 mins

Drop the mixture by teaspoonfuls onto a heavily greased and floured cookie sheet, leaving ample space between each cookie to allow for spreading. Use a spatula or the back of a spoon to gently spread each dollop into thin, even circles. (10 minutes)

04

Step
12 mins

Bake in the preheated oven until the edges are lightly golden brown, approximately 10 to 12 minutes. Watch carefully to prevent burning. (12 minutes)

05

Step
15 mins

Remove the cookie sheet from the oven and let the cookies cool for a few minutes on the sheet before transferring them to a wire rack to cool completely. (15 minutes)

06

Step
5 mins

Once the cookies are cool, prepare the chocolate. Melt the chopped semi-sweet chocolate in a heatproof bowl set over a saucepan of simmering water (double boiler) or in the microwave in 30-second intervals, stirring in between, until smooth. (5 minutes)

07

Step
10 mins

Turn the cooled Florentines upside down and spread the bottoms generously with the melted chocolate. (10 minutes)

08

Step
3 hrs

Let the chocolate-covered cookies stand at room temperature until the chocolate is firm and set, at least 3 hours. (180 minutes)

09

Step

Store the finished Florentines in a covered container at room temperature or in the refrigerator for longer storage.

For a richer flavor, toast the almonds lightly before chopping.
Ensure the candied orange peel is finely chopped to prevent the cookies from being too chewy.
If the chocolate is too thick to spread easily, add a teaspoon of vegetable shortening or coconut oil while melting to thin it out.
For a decorative touch, drizzle additional melted chocolate over the tops of the cookies after the base has set.
These cookies are best enjoyed within a few days of making, although they can be stored for longer in the refrigerator.

These were surprisingly easy to make, and they look so elegant! I’ll definitely be making these again for the holidays.

My first batch spread a little too thin, so I chilled the batter for about 30 minutes before baking the rest. That seemed to help.

  • Jaron Towne

The orange and almond combination is perfect. I added a pinch of sea salt to the chocolate, which really enhanced the flavor.
