For best results, use fully ripe, soft persimmons. If your persimmons are slightly tart, you may need to adjust the amount of sugar to taste. Sterilize your jars and lids by boiling them in water for 10 minutes prior to filling. Be sure to leave adequate headspace in the jars to allow for expansion during freezing. If you don't have orange zest, you can substitute a pinch of ground ginger or cardamom for a different flavor profile.
