For an extra layer of flavor, add a star anise or a cinnamon stick to the poaching liquid. Remove before serving. Serve the poached pears with a dollop of crème fraîche or mascarpone cheese for a decadent treat. If you don't have walnuts, pecans or almonds also work well. The pears can be prepared ahead of time and stored in the refrigerator for up to 2 days. Gently reheat them in the sauce before serving.
