For a smoother sauce, you can peel the tomatoes before seeding and quartering them. To do this, score an 'X' on the bottom of each tomato, blanch them in boiling water for 30 seconds, then transfer them to an ice bath. The skins will easily slip off. If you don't have fresh basil, you can use 1 teaspoon of dried basil. Add it along with the salt and red pepper flakes. For a richer flavor, add a tablespoon of tomato paste during the last 15 minutes of simmering. This sauce is excellent on pasta, pizza, grilled vegetables, or as a base for soups and stews.
