Follow The Directions

01

Step
2 mins

Prepare the Glaze: In a 1-quart saucepan, whisk together the chicken stock, cornstarch, minced garlic, brown sugar, ketchup, and vinegar until smooth. (2 minutes)

02

Step
7 mins

Simmer the Sauce: Cook the mixture over medium-high heat, stirring constantly, until it comes to a boil and thickens into a glossy glaze. Remove from heat and set aside. (5-7 minutes)

03

Step
10 mins

Assemble the Kabobs: Thread the pork cubes, mushrooms, and red onion wedges alternately onto 4 skewers. (10 minutes)

04

Step
20 mins

Grill the Kabobs: Lightly oil the grill rack and preheat the grill to medium heat. Grill the kabobs for 20 minutes, or until the pork is cooked through, turning frequently and basting generously with the garlic glaze. (20 minutes)

05

Step
1 mins

Add Tomatoes and Serve: During the last minute of grilling, place a cherry tomato onto the end of each skewer to warm through. (1 minute)

06

Step
0 mins

Heat the remaining glaze over medium heat to a boil. Serve the kabobs immediately with the hot cooked rice, drizzling the extra glaze over both.

For an extra layer of flavor, marinate the pork in half of the garlic glaze for at least 30 minutes before assembling the kabobs.
Feel free to add other vegetables to your kabobs, such as bell peppers, zucchini, or pineapple chunks.
If you don't have a grill, you can broil the kabobs in the oven. Place them on a baking sheet lined with foil and broil for 10-12 minutes, turning occasionally and basting with the glaze.
Serve with a side of steamed broccoli or a fresh salad for a complete meal.
