For extra crispy skin, ensure the chicken is completely dry before stuffing the rice. You can pat it down with paper towels. Feel free to experiment with different herbs in the rice mixture. Sage or marjoram would also be delicious. If you don't have sherry vinegar, apple cider vinegar or white wine vinegar can be substituted. Make sure your rice is cold and slightly dry. Freshly cooked rice will be too sticky. For easier cleanup, line your roasting pan with parchment paper.
