Follow The Directions

01

Step

Preheat oven to 400 degrees F (200 degrees C). Line a baking sheet with parchment paper. (5 minutes)

02

Step

In a large bowl, whisk together flour, white sugar, baking powder, ground ginger, cardamom, baking soda, and salt until well combined. Grate in frozen butter using a box grater; toss until the mixture resembles coarse crumbs. Stir in crystallized ginger. (10 minutes)

03

Step

In a separate small bowl or measuring cup, whisk together buttermilk, 1 egg, and vanilla extract until thoroughly combined. Pour the wet ingredients into the flour mixture and mix until just combined; do not overmix. The dough will be somewhat sticky. (5 minutes)

04

Step

Turn the dough out onto the prepared baking sheet. Gently press the dough together into an even 7-inch circle, lightly flouring your fingers if the dough is too sticky to shape. Cut the dough into 8 triangles using a bench scraper or a sharp knife. Space the scones about 1 inch apart on the baking sheet. (10 minutes)

05

Step

In a small bowl, whisk together 1 egg and water until combined. Gently brush the tops of the scones with the egg wash. Sprinkle generously with coarse sugar. (5 minutes)

06

Step

Bake in the preheated oven until the scones are lightly golden brown, 20 to 25 minutes. Cool on the baking sheet for 5 minutes before transferring the scones to a wire rack to cool completely. (30 minutes)

For best results, ensure the butter is thoroughly frozen before grating. This will create a flakier scone.
Do not overmix the dough, as this will result in tough scones. Mix just until the dry ingredients are moistened.
For a richer flavor, consider using brown butter instead of regular unsalted butter.
Feel free to experiment with other spices, such as nutmeg or cloves, to customize the flavor profile.

I found the dough a little sticky, but adding a bit more flour helped. They still tasted great!
