Add the gluten-free rolled oats and stir until the dough is thick and uniformly mixed. Gently fold in the gluten-free chocolate chips. (10 minutes)

Drop rounded tablespoonfuls of cookie dough onto the prepared baking sheets, leaving some space between each cookie. (5 minutes)

Bake in the preheated oven for 7 to 9 minutes, or until the edges are golden brown and the centers are still slightly soft. Allow the cookies to cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely. (15 minutes)
