Step

In a large bowl, whisk together 1 cup rice flour, quinoa flour, xanthan gum, basil, rosemary, oregano, and salt. Create a well in the center. (5 minutes)

In a separate small bowl, whisk together the eggs and egg yolk. Whisk in water and olive oil. Pour the egg mixture into the well in the flour mixture. Mix thoroughly until a dough forms. (5 minutes)

Transfer the dough to a work surface lightly dusted with 2 1/2 tablespoons rice flour. Knead until the dough is smooth and elastic, about 8 to 12 minutes. Cover the dough and let it rest for about 10 minutes. (25 minutes)

Divide the dough into 4 equal pieces. Dust the work surface with the remaining 2 1/2 tablespoons rice flour. Roll each piece of dough into a square shape, approximately 1/16-inch thick. Let the dough rest, uncovered, for 20 minutes. (40 minutes)

Loosely roll up each dough square and cut it into 1/4-inch pieces. Unroll the noodles. (15 minutes)

Bring a large pot of lightly salted water to a boil. Cook the noodles in the boiling water until they are tender yet firm to the bite, about 2 minutes. (7 minutes)

For a richer flavor, try using homemade chicken or vegetable broth instead of salted water to cook the noodles.
If the dough is too sticky, add a tablespoon of rice flour at a time until it reaches a workable consistency.
These noodles are best served immediately. However, you can store cooked noodles in an airtight container in the refrigerator for up to 2 days. Reheat gently before serving.
