For an extra touch of flavor, add a dash of cinnamon or nutmeg to the batter. Fresh or frozen peaches (thawed) can be substituted for canned peaches. If using fresh peaches, peel and slice about 4 cups of peaches and toss with 2 tablespoons of sugar before arranging in the baking dish. Self-rising flour is key to the cobbler's texture. If you don't have self-rising flour, you can make your own by combining 1 cup all-purpose flour with 1 1/2 teaspoons baking powder and 1/4 teaspoon salt.
