Follow The Directions

Preheat oven to 400 degrees F (200 degrees C). (5 minutes)

In a 9x13 inch casserole dish, arrange the sweet potato spears. Sprinkle with 2 cups of brown sugar and drizzle with lemon juice and 1/2 cup sherry cooking wine. (5 minutes)

Bake in the preheated oven for 25 minutes, basting with the pan juices every 8-10 minutes, until the sweet potatoes are tender and caramelized. (25 minutes)

While the sweet potatoes are baking, melt the butter in a large sauté pan over medium heat. Add the diced onion and cook until softened, about 3 minutes. (3 minutes)

Stir in 2 tablespoons of brown sugar, cloves, white pepper, and thyme. Add the frozen green beans and sauté for 2 minutes. (5 minutes)

Pour in the remaining 1/2 cup sherry cooking wine and continue to sauté until the green beans are tender-crisp and the sauce has slightly thickened, about 5-7 minutes. (7 minutes)

Remove the sweet potatoes from the oven and drain off any excess basting liquid. Gently toss the roasted sweet potatoes with the green bean mixture. (3 minutes)

For a richer flavor, try using dark brown sugar instead of light brown sugar.
A splash of balsamic vinegar at the end can add a delightful tang.
Fresh thyme can be substituted for dried thyme; use about 1 teaspoon.
To make ahead, roast the sweet potatoes and saute the green beans separately. Combine just before serving.
