Once boiling, reduce the heat to medium-low, cover the pot, and simmer gently until the potatoes are fork-tender, about 20 minutes.

For a richer flavor, consider using smoked ham hock in addition to or in place of the ham steak. Remove the hock before serving.
If you prefer a crispier green bean, add them during the last 10 minutes of cooking.
A bay leaf added during simmering will impart a subtle aromatic note to the dish. Remember to remove it before serving.
This dish is even better the next day! The flavors meld beautifully overnight.
