Using a sharp knife, cut the roll into 3- to 4-inch-long pieces. Pinch and seal the cut ends of each piece to prevent the filling from escaping. Lightly flatten each piece into a circular pancake, about 1/4-inch thick. (10 minutes)

Heat the vegetable oil in a non-stick skillet over medium heat. Cook the pancakes until golden brown and crispy, about 3-4 minutes per side. To encourage flaky layers, gently press down on the pancakes with a spatula while cooking. (8-10 minutes)

For extra flavor, consider adding a touch of sesame oil to the scallion mixture.
If you don't have time to make the dough from scratch, you can use store-bought pizza dough or dumpling wrappers as a shortcut.
