Follow The Directions

01

Step
5 mins

Preheat your oven to 320°F (160°C). Grease a small loaf pan (approximately 8x4 inches) thoroughly. This will prevent sticking and ensure easy removal. (5 minutes)

02

Step
10 mins

In a large bowl, using an electric mixer, beat the egg whites with the sugar until stiff, glossy peaks form. This step is crucial for creating the light and airy texture of the Kasutera. (10 minutes)

03

Step
2 mins

Gently whisk in the egg yolks until just combined, being careful not to deflate the egg whites. (2 minutes)

04

Step
3 mins

In a separate small bowl, whisk together the grapeseed oil, honey, and milk until emulsified. Gradually drizzle this mixture into the egg mixture, gently folding until just combined. Avoid overmixing. (3 minutes)

05

Step
5 mins

Sift the all-purpose flour and matcha powder together twice into a separate bowl. This ensures even distribution of the matcha and eliminates any lumps. (5 minutes)

06

Step
5 mins

Gradually add the sifted flour mixture to the egg mixture, gently folding until just combined. Be careful not to overmix, as this can develop the gluten in the flour and result in a tough bread. (5 minutes)

07

Step
2 mins

Pour the batter into the prepared loaf pan. Gently tap the pan on the counter a few times to release any trapped air bubbles. (2 minutes)

08

Step
50 mins

Bake in the preheated oven for approximately 50 minutes, or until a toothpick inserted into the center comes out clean. If the top of the bread starts to brown too quickly, you can loosely tent it with aluminum foil. (50 minutes)

09

Step
10 mins

Once baked, remove the bread from the oven and let it cool in the pan for 10 minutes before transferring it to a wire rack to cool completely. (10 minutes)

For an even more intense matcha flavor, you can increase the amount of matcha powder to 1 tablespoon.
If you don't have grapeseed oil, you can use any other neutral-tasting oil, such as canola or vegetable oil.
Kasutera is best enjoyed at room temperature or slightly chilled. It can be stored in an airtight container at room temperature for up to 3 days.
For a decorative touch, dust the top of the cooled Kasutera with a light coating of matcha powder before serving.
Ensure the egg whites are beaten to stiff peaks for a light and airy texture. Overmixing the batter after adding the flour will result in a denser bread.

Be careful not to overmix! I did that the first time and it wasn't as light as I'd hoped, but it was still tasty. Second time was perfect!
