Add the diced Yukon Gold potatoes to the simmering stock mixture. Cook until the potatoes are tender and easily pierced with a fork, approximately 20 to 30 minutes.

Stir in the heavy cream, sliced leek, minced garlic, and chopped fresh thyme. Increase the heat to medium and bring the soup to a gentle boil, then reduce the heat back to medium-low and simmer for another 10 minutes, allowing the flavors to meld together.

Add a pinch of cayenne pepper for a subtle kick.

Gradually melt in the shredded Irish Cheddar cheese, one cup at a time, while using an immersion blender to blend the soup until smooth and velvety. Be careful not to over-blend, as this can make the soup gluey.

For a richer flavor, consider using homemade vegetable stock.
If you don't have an immersion blender, you can carefully blend the soup in batches using a regular blender. Be sure to vent the lid to prevent pressure from building up.
Garnish with additional shredded Irish Cheddar, fresh thyme sprigs, or a swirl of cream before serving.
