For a richer flavor, use full-fat coconut milk instead of extracting your own. Adjust the amount of sugar to your preference. Some prefer a less sweet Haupia. If you don't have fresh coconut, you can use unsweetened shredded coconut. Soak it in hot water for a longer period to rehydrate. Be sure to stir constantly while cooking the Haupia to prevent burning and lumps.
