For a more intense chestnut flavor, use chestnut flour in place of some of the all-purpose flour. Marrons glacés can be expensive. You can substitute with other candied fruit, but the flavor will be different. Be careful not to overbake the cake, as it can become dry. The cake can be made a day ahead and stored in the refrigerator. Let it come to room temperature before glazing and serving.
