Follow The Directions

01

Step
5 mins

In a large bowl, gently combine the ground pork, molasses, salt, black pepper, sage, thyme, red pepper flakes, onion powder, parsley, nutmeg, fennel seeds, cayenne, and allspice. Mix with your hands until just combined to avoid overworking the meat. (5 minutes)

02

Step
10 mins

Divide the seasoned pork mixture into 16 equal portions. Shape each portion into a patty, approximately 1/4-inch thick. (10 minutes)

03

Step
30 mins

Heat a non-stick skillet over medium heat. Once hot, pan-fry the sausage patties in batches, ensuring not to overcrowd the pan. Cook until golden brown and cooked through, about 5 minutes per side, or until the internal temperature reaches 160°F (71°C). (20-30 minutes)

For a sweeter sausage, increase the molasses to 2 tablespoons.
If you prefer a spicier sausage, add an extra 1/4 teaspoon of cayenne pepper.
To ensure even cooking, use a meat thermometer to check the internal temperature of the patties.
Leftover cooked patties can be stored in the refrigerator for up to 3 days or frozen for up to 2 months.
To freeze, place cooked patties in a single layer on a baking sheet and freeze until solid. Then, transfer to a freezer bag or container.
Defrost frozen patties in the refrigerator overnight or in the microwave on the defrost setting.
